Recipe: Super Veggie Kabobs

Ingredients:

1 medium-sized zucchini
1 medium-sized yellow squash
1 red bell pepper
1 green bell pepper
1 red onion
8-10 cherry tomatoes
8-10 button mushrooms
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried Italian herbs (such as oregano, basil, thyme)
Salt and pepper to taste
Wooden or metal skewers


Instructions:

  • Preheat your grill to medium-high heat or preheat your oven to 425°F (220°C) if you prefer to roast the kabobs.

 

  • Prepare the vegetables:

Zucchini and yellow squash: Cut them into thick slices, about 1-inch thick.
Bell peppers: Remove the seeds and cut them into chunks, roughly the same size as the squash.
Red onion: Cut it into wedges, separating the layers.
Cherry tomatoes: Keep them whole.
Mushrooms: Leave them whole or halve them if they are large.

 

  • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, dried Italian herbs, salt, and pepper to make the marinade.

  • Place all the prepared vegetables in a large bowl and pour the marinade over them. Toss gently to ensure all the vegetables are coated evenly. Let them marinate for at least 15 minutes to allow the flavors to develop.

  • If you're using wooden skewers, soak them in water for about 15 minutes to prevent them from burning.

  • Assemble the kabobs:

Thread the vegetables onto the skewers, alternating between different colors and types of vegetables. Leave a small gap between each piece to ensure even cooking.

Repeat the process until all the vegetables are used.

  • If grilling:

Place the kabobs on the preheated grill and cook for about 8-10 minutes, turning them occasionally, until the vegetables are tender and slightly charred.


Baste the kabobs with any leftover marinade during cooking for extra flavor.

 

  • If roasting:

Arrange the kabobs on a baking sheet lined with parchment paper and place it in the preheated oven.
Roast for approximately 15-20 minutes or until the vegetables are tender and nicely browned.
Once cooked, carefully remove the kabobs from the grill or oven. Allow them to cool slightly before serving.
