Roasted Cauliflower Steaks with Lemon-Caper Sauce

Ingredients:

  • 1 large head of cauliflower

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • Fresh parsley, for garnish

 

For the Lemon-Caper Sauce:

  • 1/4 cup vegan mayonnaise

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon capers, chopped

  • 1 tablespoon chopped fresh dill

  • Salt and pepper to taste

 

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. To prepare the cauliflower steaks, remove the outer leaves from the cauliflower, but keep the core intact. Place the cauliflower upright on a cutting board. Using a large, sharp knife, carefully slice the cauliflower into 1-inch thick steaks, starting from the top and working your way down. You should be able to get two or three steaks, depending on the size of the cauliflower. Reserve any smaller florets for another use.

  3. In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Brush both sides of each cauliflower steak with the oil mixture, ensuring they are evenly coated. Place the steaks on the prepared baking sheet.

  4. Roast the cauliflower steaks in the preheated oven for 20-25 minutes or until golden brown and tender, flipping halfway through cooking.

  5. While the cauliflower is roasting, prepare the lemon-caper sauce. In a bowl, whisk together vegan mayonnaise, lemon juice, chopped capers, chopped dill, salt, and pepper until well combined. Adjust the seasoning according to your taste.

  6. Once the cauliflower steaks are done, remove them from the oven and let them cool for a few minutes. Serve each steak with a generous drizzle of the lemon-caper sauce. Garnish with fresh parsley.
