Ingredients:

Mujadara recipe​

  • 1 cup brown or green lentils, rinsed and drained

  • 1/2 cup white or brown basmati rice

  • 3 medium onions, sliced thinly

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp turmeric

  • 1/2 tsp cinnamon

  • Salt and pepper, to taste

  • 3 cups water

  • Fresh parsley or cilantro, chopped (optional)

Instructions:

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and stir to coat with the oil. Cook for 10 minutes, stirring occasionally, until the onions are golden brown and caramelized.

  • Remove half of the onions from the pot and set them aside.

  • To the pot, add the lentils, water, and spices (cumin, coriander, turmeric, cinnamon, salt, and pepper). Bring to a boil, then reduce the heat to low and let simmer for 20-25 minutes, or until the lentils are tender and most of the water has been absorbed.

  • In a separate pot, cook the rice according to package instructions.

  • Once the lentils are cooked, add the cooked rice to the pot and stir to combine.

  • Serve the mujadara in bowls and top with the reserved caramelized onions and fresh parsley or cilantro, if desired.
