Ingredients:

  • 1 tbsp olive oil

  • 1 large onion, diced

  • 4 garlic cloves, minced

  • 1 tbsp grated fresh ginger

  • 2 tsp ground cumin

  • 2 tsp paprika

  • 1 tsp ground coriander

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground turmeric

  • 1/4 tsp cayenne pepper (optional)

  • 4 cups vegetable broth

  • 1 can (14 oz) diced tomatoes, drained

  • 1 cup dried red lentils, rinsed and drained

  • 2 cups chopped kale

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh cilantro

  • Salt and freshly ground black pepper, to taste

 

In a large bowl, mix the lemongrass paste, garlic, soy sauce, fish sauce, honey, and vegetable oil together.

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes.

  2. Add the garlic and ginger and cook for another 1-2 minutes, until fragrant.

  3. Add the cumin, paprika, coriander, cinnamon, turmeric, and cayenne pepper (if using) to the pot and stir to combine.

  4. Pour in the vegetable broth and diced tomatoes and stir to combine. Bring the mixture to a simmer.

  5. Add the red lentils to the pot and stir to combine. Simmer the soup for 15-20 minutes, or until the lentils are tender and the soup has thickened slightly.

  6. Stir in the chopped kale, parsley, and cilantro and cook for another 2-3 minutes, until the kale has wilted.

  7. Season the soup with salt and freshly ground black pepper to taste.

  8. Serve the soup hot, garnished with additional chopped parsley and cilantro if desired.
