Ingredients:

Greek Veggie Tartlets

  • 1 package (9 oz) refrigerated pie crusts

  • 1/2 cup crumbled feta cheese

  • 1/2 cup chopped frozen spinach, thawed and squeezed dry

  • 1/2 cup chopped sundried tomatoes

  • 1/2 cup chopped Kalamata olives

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh dill

  • 2 tablespoons chopped fresh mint

  • 2 tablespoons chopped fresh basil

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 eggs

  • 1/2 cup milk

Instructions:

  • Preheat the oven to 375°F (190°C). Roll out the pie crusts on a lightly floured surface and cut them into 24 circles using a 2 1/2-inch cookie cutter. Place the circles into two 12-cup muffin tins.

  • In a large mixing bowl, combine the feta cheese, spinach, sundried tomatoes, Kalamata olives, parsley, dill, mint, basil, salt, and black pepper. Mix well.

  • In a separate bowl, beat the eggs and milk together. Add the egg mixture to the veggie mixture and stir until well combined.

  • Spoon the veggie mixture into the pie crusts, filling each one to about 2/3 full.

  • Bake the tartlets in the preheated oven for 20-25 minutes, or until the filling is set and the crusts are golden brown.

  • Allow the tartlets to cool for a few minutes before serving.
